One of my summer favorites with sweet watermelon, fresh mint, salty olives and feta – a burst of sweet and salty in each mouthful. There is just something so refreshing about cool sweet watermelon on a hot summer day, and if you are looking for a great way to use that leftover watermelon and other seasonal ingredients you may have sitting around in your refrigerator – you will absolutely want to dig into the Watermelon and Feta Salsa. Although 92% water, watermelon boasts a significant amount of immune-boosting Vitamin C, A and potassium combined with antioxidant-rich tomatoes, you have one delicious, nutrition-packed dish! Mint may be small in size, but it also contains antioxidants, Vitamins A and C. Not to mention mint also helps fight off bad breath! Don’t forget to pair this salsa with toasted whole-wheat pita triangles and you have a delicious, nutritious sweet and savory snack.

Terrific Tip: Raid a salad bar for fresh Kalamata olives-it makes a difference.
Nutrition Nugget: Look on the bottom of the melon and you’ll find a discolored spot where the melon rested on the ground when it was growing. If this spot is light green, the melon is not yet ripe. If the spot is a yellowish-white color, the melon is probably ripe.
