This light and easy 4-ingredient risotto has Italian roots, but without the fuss. Oven Baked Risotto is an uncomplicated diabetic-friendly side dish that pairs well with just about anything. Stir the ingredients together and pop in the oven for a wonderful, fast recipe. Be sure to look for this particular Arborio or risotto rice as it has a special creamy texture.
